Red Bean Dorayaki is a sweet finish that is simpler than it looks. Room-temperature eggs cook more evenly, whether you are rolling an omelette or soft-boiling for ramen. A small dish of pickled ginger between bites keeps the palate fresh.

Method

  1. Whisk the eggs, sugar and honey until pale, then fold in the flour and baking powder with the water to make a smooth batter. Rest 15 minutes.

  2. Heat a nonstick pan over medium-low, wipe with oil and pour 3 tablespoons of batter from a height to form a perfect circle.

  3. Cook until bubbles appear, about 2 minutes, flip and cook 30 seconds more. Cover the pancakes with a towel as you go.

  4. Sandwich a thick layer of red bean paste between two pancakes, pressing the edges gently. Wrap in plastic to soften for 10 minutes.
