Heart Art Matcha Latte is a sweet finish that is simpler than it looks. Sifting matcha before adding liquid is the single best way to avoid clumps. Serve it with green tea or a crisp, cold drink.
Method
Sift the matcha into a bowl, add the hot water and whisk until smooth and frothy with no lumps.
Steam or heat the milk to about 150 F and froth until glossy with fine bubbles.
Pour the matcha into a cup, then pour the milk from a height before bringing the jug close to draw a heart in the foam.
Sweeten with honey to taste and serve.
Chef's note
Mochi hardens in the fridge; store at room temperature and eat within a day.
