Yes, as long as you buy fish specifically sold for raw consumption from a reputable fishmonger, keep it cold and eat it the same day. If you are pregnant, immune-compromised or unsure, choose our cooked and plant-based recipes instead.

No. Every rice recipe includes a stovetop method using a heavy pot with a tight lid. A rice cooker simply makes the process more hands-off.

Most large supermarkets carry the basics in their international aisle. Asian grocery stores have the widest selection, and our store stocks rice, sesame, seaweed and noodles.

Rolls and nigiri are best within an hour of making them. You can season the rice and prep fillings a few hours ahead; keep the rice covered with a damp towel at room temperature, never in the fridge.

Like a conveyor-belt sushi bar, each recipe sits on a colored plate: green for Easy, pink for Medium and indigo for Advanced.
