Chewy noodles and a well-balanced dashi make this one of the most comforting meals in the collection. Shell-on shrimp stay juicier; peel them after cooking and they keep their curl and sweetness. Rinse cooked soba under cold water, rubbing gently, to remove surface starch so the noodles stay distinct. Serve it with green tea or a crisp, cold drink.
