Chewy noodles and a well-balanced dashi make this one of the most comforting meals in the collection. Room-temperature eggs cook more evenly, whether you are rolling an omelette or soft-boiling for ramen. Frozen udon is surprisingly close to fresh; it cooks in about a minute straight from the freezer. Leftover components keep for a day in the fridge, but the finished dish is best eaten fresh.
