Donburi are all about the sauce soaking into hot rice, so do not skimp on it. A little fat in the pork keeps fillings and stir-fries juicy, so avoid the leanest cuts. Taste as you go and adjust the seasoning to your liking.
Method
Wash and drain the rice, cook it in a rice cooker or covered pot, and let it rest 10 minutes before fluffing with a paddle.
Toss the sliced pork with grated ginger, 2 tablespoons soy sauce and 1 tablespoon mirin. Sear in a very hot pan with the onion until caramelized at the edges.
Pack warm rice into bowls, press lightly to flatten and arrange the topping over it.
Garnish with ginger and serve hot.
Chef's note
Slice onions evenly so they cook at the same rate.
