Rolls like this reward a thin layer of rice and a confident, even squeeze of the mat. Mix spicy mayo a few minutes ahead so the chili has time to bloom into the mayonnaise. Look for tuna with a clear, glassy red color and no rainbow sheen; a single even block is far easier to slice than trimmed pieces. Taste as you go and adjust the seasoning to your liking.
